Dakhanmari Guide: Chicken & Noodles

Dakhanmari (닭한마리) means “one whole chicken.” The chicken is boiled in soup and served with dipping sauce.

After the meat, noodles cook in the remaining broth. This chicken-to-noodles sequence defines the meal in Seoul’s Dongdaemun (동대문) alley.

This guide explains the pot, the additions, and the noodle finish, with menu details from two Seoul restaurants to help you plan an order.



1. What Is Dakhanmari?

The name describes the starting point: a whole chicken boiled in soup.

The dish centers on chicken and broth, with a separate sauce for dipping the meat.

Dongdaemun Dak Hanmari Alley (동대문 닭한마리 골목) takes its name from the restaurants serving this dish near Dongdaemun Market.

This is a different meal format from Dakgalbi, Korea’s seasoned chicken dish. The emphasis here is on soup and a noodle finish, not an iron-plate or charcoal cooking style.



2. Chicken, Broth, and Optional Additions

At Jinokhwa Halmae Wonjo Dakhanmari (진옥화할매원조닭한마리), the main dish is whole chicken soup. Rice cakes, green onions, potatoes, and noodles are available as additions.

The main chicken order and extra ingredients are not necessarily the same purchase.

Check what comes with the pot before choosing additional rice cakes or potatoes.

Songane Dakhanmari (손가네닭한마리), another Seoul restaurant, serves chicken and vegetables in a garlic-infused broth.

Its menu illustrates why the dish should not be reduced to a single fixed recipe: the broth and available finishing options belong to the individual restaurant.

Useful menu words include tteok (떡) for rice cakes, gamja (감자) for potatoes, and kalguksu for knife-cut noodles.

Use these names to distinguish additions rather than assuming every ingredient in a photograph is included in the base order.



3. Dipping Sauce and Seasoning Choices

The dipping sauce is part of the Dongdaemun alley’s serving style. Chicken is served with sauce, allowing the meat and its accompaniment to remain distinct from the soup itself.

Songane’s version pairs chicken and vegetables cooked in garlic-rich broth with seasoning.

Diners can choose a plain or spicy preparation there, so the presence of a chicken soup on the menu does not by itself settle how it will be seasoned.

Ask whether each condiment is intended for dipping or for seasoning the broth.

When sharing, remember that changing the soup changes the noodle course as well.

If avoiding chili is important, confirm both the broth and the sauce with the restaurant.

A pale broth in a photograph is not a guarantee about the ingredients, and Songane’s plain-or-spicy choice should not be assumed to apply everywhere.



4. From Chicken to Kalguksu

In Dongdaemun’s chicken-soup alley, diners eat the chicken first, then use the broth to make kalguksu.

The noodles therefore continue the same meal rather than arriving as an unrelated bowl of soup.

Jinokhwa offers noodles among its additional ingredients.

At Songane, the remaining broth can be finished with kalguksu or porridge.

These are restaurant-specific options, not a promise that every establishment serves both.

Check the finishing choices when ordering the chicken.

If you want noodles, ask staff when they should be added and whether they are charged separately.

Avoid treating a noodle finish as automatically included unless the menu confirms it.

Dongdaemun Dak Hanmari Alley is near Dongdaemun Market in Jongno-gu (종로구), Seoul.

Its restaurants provide a focused setting for the whole-chicken-and-noodles meal.

Jinokhwa Halmae Wonjo Dakhanmari has operated since 1978 and specializes in the dish. Its address is 18 Jong-ro 40ga-gil, Jongno-gu, Seoul.

Songane provides another example at 10, Jong-ro 66ga-gil, Jongno-gu, Seoul.

Its signature chicken soup is listed for two or more diners, with garlic-infused broth.

Noodles or porridge can follow the chicken.

Confirm serving counts with the restaurant you choose.

Songane’s two-person format does not establish a minimum for every chicken-soup restaurant.

“One whole chicken” names the dish; it does not guarantee a portion for a particular group.

Settle the size of the chicken order, the additions, and the finishing course.

Check prices and inclusions on the current menu, not in an older photograph.
